Sleep in!

What a morning, sleep in for everyone! Well I should mention not for Daddy he started work very early  and will be gone all day. If you are reading this Daddy we will let you sleep in tomorrow. I think we all needed the extra sleep with everyone being sick. I am so over colds and flu, I long for summer and the warmer weather.

Now that we have all slept in I'm feeling way behind.  Washing for seven can be a huge job and I have a mountain of washing waiting for me today. There is baking to be done, children to take to Saturday sport, meal planning for the week and the list goes on. I love my weeks to be planned but of late not much of that has been happening, so my plan is to get myself organized. Watch out children Mum is on a mission!

Friday

Well it's that time of the day again, school pick up time. I especially love Friday school pick up  because that means it's the weekend ! On Fridays we keep it simple and have pizza. We call it Pizza party Friday night, it's always been and always will, the kids love it and I love how simple it is!

What do you all have planned for this Friday night and do you also have a Friday night family tradition? I just love hearing how families have fun and make memories together!

Cinnamon Scrolls

Hot fresh baked cinnamon scrolls are just delicious. Well that's what my son will tell you when I bake them as a surprise. If you could see all the kids faces when they are drawn to the kitchen by such sweet smells, man oh man these scrolls are good. I promise you that stopping at one is almost impossible. These scrolls are easy, soft, sweet and fluffy.

Easy Cinnamon Scrolls 



When I say easy I mean easy. Just mix, roll out and bake!

For the dough:

2 1/4 cups of self raising flour
1 tbsp caster sugar
100g butter
2/3 cup milk
1 egg

For the spread:

1/4 cup brown sugar
1 tsp ground cinnamon
2 tbsp butter


Preheat oven to 180 degrees in a fan- forced oven.
Grease a rectangular slice pan.
Combine flour and sugar into a bowl. Rub butter in
until mixture resembles breadcrumbs.
Mix milk and egg in a jug and stir into flour mixture.
When soft and sticky dough has formed, turn onto a floured surface.
Knead until smooth.
Roll out dough into a 30x40cm rectangle.
Spread the brown sugar, butter and cinnamon spread over dough.
Roll dough tightly.
Using a sharp knife slice into about 14 rolls.
Place slices on tray and bake for 20mins or until golden.
Serve warm with a mixture of icing sugar and water mixed to make a runny icing drizzled all over scrolls.

Cinnamon Scrolls


Sorry for my lack of photo's for the month of August. Everyone has been sick with what ever virus is around at the moment and I've been nurse. Unfortunately this nurse is sick now! 

Cinnamon scrolls equal yum and I just had to share this photo. They are super easy and man oh man they are good. I'll post the recipe on Sunday.

Chocolate coconut slice

As promised, here is the recipe for a very quick slice. This recipe is also egg free but I promise that it doesn't affect the outcome.


Chocolate coconut slice

3 cups self raising flour
2 cups brown sugar
2/3 cup cocoa
2 1/2 cups desiccated coconut
500g block of butter
2 tsps of vanilla extract
* you can chose to ice the slice or just dust with icing sugar when cool! I truly prefer to ice mine and then sprinkle with coconut

Chocolate  icing

4 cups icing sugar
1/2 cup to 2/3 cup cocoa
120g butter
5 tbsp hot water

Pre heat oven 180  degrees

Melt butter and allow to cool slightly
Mix all dry ingredients together
Add butter and Vanilla to dry ingredients
Mix well
Press into slice tin
Bake for 15 minutes or until cake tester comes out clean
Allow to cool completely before icing
Mix all icing ingredients together and blend until smooth
Sprinkle with coconut

Really all I can say is yum!

It has been a baking kind of afternoon. I whipped up three huge trays of Chocolate coconut Slice ready for rugby canteen. Well maybe two trays for rugby and one tray for us!
