Bircher Muesli

The kids have been at me to make bircher muesli for breakfast. I usually make it for Christmas morning breakfast along with a fruit platter, cheeses, smoked salmon, my baked ham, croissants and hot rolls. But I thought to myself why just keep it for Christmas it is so yummy! So I thought I would share my recipe ( well not really my recipe, it was given to me by my dear friend Peter. I'm sure he won't mind if I share). I have also made changes to suit my family.....Enjoy!




Ingredients

2 cups of rolled oats
1 1/4 cups of apple juice
1/2 cup of thick natural yogurt
1 granny smith apple grated
1/2 cup of slivered almonds
1-2 mangoes sliced (quantity depends on taste)
1 punnet of blueberries


Method

1. Place rolled oats in a bowl. Add the apple juice and stir. Cover with plastic wrap and leave overnight in refrigerator.
2. Before serving stir through yogurt, apple, almonds and half the blueberries. Spoon into bowls and top with mango, blueberries, a spoon of yogurt and extra almonds.

Note:

Add any fruit you like to suit your taste.

Winter how I love thee!

Cold, I like it!

I so look forward to the cooler months of the year. Winter is my favorite season! The nights are certainly getting cooler here in Toowoomba and the early mornings. Perfect for Easter holidays with my 4 beautiful children, lots of sleep inns  and long snuggles in bed. My favorite things about winter are,  woollen jumpers, quilts, blankets, socks, beanies, hot chocolate, soups, hot crunchy bread, fireplace crackling, wood piles and lots of winter baby snuggles. Oh how I wish it snowed!

Cupcakes

Easy Cupcake Recipe

This is the easiest cupcake recipe and they taste DIVINE! This recipe came from my Nana, she always made these when I was little. They are a small cake recipe, she also used this recipe for butterfly cakes and peach blossoms.

 
Small Cakes
120g butter
2/3 cup caster sugar
2 large eggs
2 cups of self-raising flour
Vanilla
1/2 cup milk

1. beat butter and sugar to a cream. Add vanilla.
2. Add eggs and beat well.
3. Add sifted flour and milk, alternatively.
4. Mix all ingredients together and spoon into paper patty pans.
5. Bake in moderate oven at 190 degrees for 10-12 mins.

Makes 12 cakes

Honey Cookies

Always fun to experiment!

I thought I should share this recipe again that I posted last year.  I have made just a few changes for those with a gluten intolerance. The recipe is a great cookie base so you can add or do what ever you like to this recipe.
The changes I made-
155g of gluten free self raising flour (I love white wings brand)
1 cup choc chips

They are fast, easy and divine. Perfect for busy Mums.

Scrumptious Alert!

So, if you read my last post you all know why I haven't been blogging and as I have said I'm back.
I have the best cookie recipe for you. This recipe is one of my Nana's! They are super easy and only have 4 ingredients. I know you are all time poor, just like me!

Honey Cookies

90g butter
1/2 cup sugar
155g self raising flour
A good heaped tablespoon honey

1. Cream butter and sugar.
2. Add flour, honey and mix until combined.
3. Form teaspoons full of dough and press down lightly.
4. Bake approximately 12 minutes in Moderate oven.

*you can add anything you like to the centre of cookie for example, smarties, jaffas, m&m's .....

Lifes little miracles!

After a whirlwind several months packed with many events, miracles and loads of blessings I am back!.....and still trying to catch my breath!  I know many of my close friends and family are in the know as far as what life has given us this year. For those of you who don't we have been given the most beautiful blessing a gorgeous baby girl. My pregnancy had it's ups and downs to say the least. With the threat of early delivery, we managed to hold delivery off until  37 weeks, so our sweet girl could enter the world full term and healthy. Well as of today our sweet girl is 18 weeks old and yes that time has flown by so quickly. Our fair lady has grown so big and beautiful. I am making sure I never miss one bit of this scrumptious girl. I feel like we have all settled into each other so gloriously. She is such an incredibly happy, comfortable, cuddly and settled baby. Even though this is baby number 4, I really never knew babies could be so relaxed and calm, which makes me calm and relaxed. The smiles and cuddles that this beauty gives us each day makes our hearts soar. If only that feeling could be bottled! As I write this my little girl is snuggled into my chest, all rugged up in a cosy baby blanket,  these are the moments I love and cherish. I must admit, I still spend my days wandering around in complete amazement that she is here and all mine. We are just over the moon.




When I say we I also mean that this beautiful baby girl has the most adoring older sisters and brother, that just love her so much.

There are many other life  journeys I could share with you, some just to hard to put into words but then I would be here for ever rattling on so I have kept it to one of the most beautiful events in our lives.

Well to finish,  if anything I have learnt over this last year is life can be super crazy, filled with many heart stopping moments, love, smiles, happiness, peace and pure contentment and then out of the blue can come amazing gifts when least expected. There have been many valuable lessons this year, I have learnt to cherish my family more and more each day, to focus all my energy on Vintage  Daddy and my four beautiful children because they are what is most important in my life. I thank god for giving me the strength to see things through and help me see the big picture.
