Chocolate coconut slice

As promised, here is the recipe for a very quick slice. This recipe is also egg free but I promise that it doesn't affect the outcome.

Chocolate coconut slice

3 cups self raising flour
2 cups brown sugar
2/3 cup cocoa
2 1/2 cups desiccated coconut
500g block of butter
2 tsps of vanilla extract
* you can chose to ice the slice or just dust with icing sugar when cool! I truly prefer to ice mine and then sprinkle with coconut

Chocolate  icing

4 cups icing sugar
1/2 cup to 2/3 cup cocoa
120g butter
5 tbsp hot water

Pre heat oven 180  degrees

Melt butter and allow to cool slightly
Mix all dry ingredients together
Add butter and Vanilla to dry ingredients
Mix well
Press into slice tin
Bake for 15 minutes or until cake tester comes out clean
Allow to cool completely before icing
Mix all icing ingredients together and blend until smooth
Sprinkle with coconut

Really all I can say is yum!

Pizza Party Friday Night

What are you all doing this fine Friday night?? Well what I should ask is, what do you all do as a family on a Friday night? We have easy night on Fridays, as we call it 'Pizza Party Friday Night'. I so enjoy not having to plan to much for dinner after such a huge week of school, sports commitments and wrangling our 19mth old! Everyone here loves pizza and a movie with our feet up!
Let me know what your plans are. I just love hearing how other families spent time together.

Worlds yummiest cookies!

Cookies, cookies, cookies! These cookies are so yummy it is hard to stop eating them. The recipe has a great base and you can add what ever treat you like, choc chips, white choc and macadamia, cranberry coconut and white choc, the list is endless.  I love a large crispy base cookie!

2 cups of chocolate chips
2 1/4 cups of plain flour ( I have replaced with gluten free flour)
1 1/2 cups of castor sugar
good pinch of salt
1 teaspoon of baking soda
1 cup of butter
2 large eggs
1 teaspoon of vanilla

1. Pre heat oven to 180 degrees.
2. Beat butter and sugar to a cream.
3. Add eggs one at a time and vanilla to butter and sugar mixture.
4. Sift flour, salt and baking soda, add to butter mixture and mix together with wooden spoon.
5. Add chocolate chips and mix well.
6. Spoon heaped amounts onto lined trays and bake only until just cooked.
Note. Times vary depending on oven, you will need to watch so you don't over cook. Cookies will continue to cook slightly after removing from oven.

I dare you to not eat one of these scrumptious cookies hot, they are divine!  Let me know if you try this recipe and what you think!!!
